Hello. My name is Seong-woo Yoon, who is currently working in the Donut & Food Development Team at the BR Korea Research Institute.

 

Q. What Is the Difference Between a Donut and a Bagel?

 

The difference between donuts and bagels can be divided according to the baking method and their attributes. Donuts are fried in oil immediately after fermenting the dough, boasting of a soft texture, and are made with glaze, donut sugar, and chocolate toppings, making them suitable for snacking. On the other hand, bagels have a chewy texture — the dough is fermented, boiled in the water, then baked in the oven. By boiling the dough in water, a crust is formed on the surface, giving it a slightly crisper texture like a baguette. As a bread, it can replace your meal; it can be served with cream cheese or eaten as a sandwich, as the thick crust makes it more moist than regular donuts.

Q. How Are Regular Donuts Different from Cake Donuts?

 

The biggest difference is the presence or absence of fermentation — due to the addition of yeast —and the difference in texture. Normal donuts boast of a chewy texture as gluten is strengthened due to the biological process of fermentation caused by yeast. Cake donuts use baking powder instead of yeast, so there is no fermentation process; also, they are fried immediately after kneading, giving them a heavy and moist texture.

 

Q. How are different donuts shaped?

 

For regular donuts, the dough is rolled out, cut and put into the fermentation chamber. It is possible to set the desired shape by marking with a cutter in the cutting stage. Dunkin continues its research to provide a variety of fun-shaped donuts.

For those who don’t like coffee, I tend to recommend ade and iced tea, which are refreshing among sweet drinks.

 

Q. Do You Have Your Own Secret to Enjoying Donuts More Deliciously?

 

Personally, I like to eat regular donuts dipped in melted chocolate like fondue, and glazed ones with my favorite jam. Both methods are recommended because you can enjoy a new taste by adding filling or toppings. In order to enjoy donuts more deliciously, it is recommended to store them well. In case of donuts that have cooled, it is okay to microwave them for a while before eating them, but using an air fryer is not recommended. Because donut is a product that is fried during preparation, and then cooled down to room temperature — if heat is applied to the donut for a long period of time, it will lead to a loss of moisture; hence, deteriorating the texture of the donut. Keep it sealed at room temperature as much as possible and enjoy it as it is or with a hot cup of tea or coffee.
